  • My research career has shown great interest in new food processing technologies and the application of innovative methods of analysis and data processing in various problems of the agri-food industry. My vocation to explore the field of interdisciplinarity has led me to establish multiple relationships with various groups. My most recent work has been oriented towards the application of spectroscopic methods to determine the changes caused by technological processes and to valorise by-products and low-value foods with a focus on taking advantage of the functional compounds they contain.
