  • I’ve been working in food research mainly focused in the development of new preservation and transformation methods to process foods such as high pressure technology, and ultra high pressure homogenization. These research lines include the study of different aspects related to the quality of final products obtained by application of the different mentioned technologies, which includes studies, on one hand, related to food safety and nutritional value and, on the other hand, evaluation studies of physical, compositional, micro structural and sensory characteristics. Specially, I have been working in milk and dairy products and vegetable beverages.
