  • Research lines
  • I have been working in the application of new technologies to guarantee food safety and optimize the organoleptic and nutritional characteristics of foods since my PhD, particularly with high-pressure processing of foods (e.g. cheese, milk and soymilk). I have special interest in the assessment of injury caused to pathogenic bacteria by food processes. Recently, I have also been working in the optimization of gluten-free bread formulations, studying the effect of different ingredients and technologies on its baking and physical characteristics.
